Of course, initial sharpness is only one factor (we'll see how it holds up and whether or not it rusts), but that first impression was a good one and that matters a lot.
The knife is heavy for its size, but not too heavy. The handle is comfortable and fits the tang perfectly. If it really is an AUS10 and a true Damascus, I think it will work very well.
The knife is beautiful. I am very happy with the purchase.

Qualitativ wirklich in Ordnung. Sehr sch?n Holzblock. Ergonomisch liegen die Messer super in der Hand und sind sackscharf. Nach einigen Wochen Einsatz noch keine Ermdungserscheinungen zu erkennen.
Fr den Hobbykoch absolut empfehlenswert. Fr den Preis kaum zu schlagen.
When I was young I did a lot of work as a chef and learned what good knives are like. These are very good knives. Everything about this set is stunningly beautiful from the incredible block to the handles of the knives. The knives themselves are so sharp, it is almost unreal. Be extremely careful handling these knives as most consumer grade knives are not nearly as sharp as these. Even the wood block can bite you. When I separated the two halves and then put them back together, I had my finger in the wrong place and got a blood blister. So the basic message is these knives are fantastic but be super careful with them.
The set comes with everything you need, although I was surprised there was not a pair of shears at this price point. I'm completely mesmerized by the block and the great quality of the wood that was used. This is something you'll be proud to have in your kitchen, as I am. I highly recommend these and I highly recommend you be very careful with them

I cut myself right out of the gate just unpacking them LOL they are sharp and really nice. Come with accompanying magnetic strip for hanging. Great quality so far. Cut through a corn cob lime butter just glad that wasnt my finger!

Vero damasco e non una cineasta stampata sul metallo. Affilatura a rasoio, manicatura confortevole che offre una buona presa. Set completo di tutto. Resta solo da vedere la tenuta del filo nel tempo.
I'm not a professional chef, but I've watched enough Forged In Fire to recognize a quality knife. And these are some pretty nice knives. They're head and shoulders above the cheap set Im replacing. They have a nice weight to them, feel good in the hand, and are nicely finished. Theyre also really sharp - dont ask me how I know!
The construction of these knives is very good. They have a thick blade spine and full tang construction for strength. The pommel is metal as is the bolster / ricaso area (the bit between the blade and the handle that serves as functional protection). The wooden handle scales are pinned through the tang with three pins and well blended into the metal parts. All this adds up to a solid and quality feel in the hand, and it's all nicely finished.
They are advertised as 1.4116 German Steel. This is a high carbon stainless steel, notably used in Swiss Army knives. Although I have no way to verify the alloy, research shows this is a common steel for cutlery (also known as X50CrMoV steel). While it has good edge retention, it isnt extremely hard so periodic sharpening with the included sharpener will be required.
Because of the wooden handles (and since they are nice knives), I wouldnt advise putting them in the dishwasher, even if the manufacturer says you can do so. Theyll hold up much better to hand washing.
The knife block is attractive and functional, but its difficult to know which knife is supposed to go where. Just pick where they fit best I guess.
I will update this review if anything changes, but right now Im very pleased. This is a massive step up from my cheap set of department store knives. If I ever have to go on a game show and cut my way out of a cage of meat, these are the knives I'm taking.
The set comes packaged really nicely and the knives are SHARP. First time they sliced through chicken and veggies like a dream and I like the tomato knife. They have decent amount of weight to them. I really like the steak knives in this set, they are good sized. I am not a fan of the serrated blades in the last set I bought, so not having that was important In this time around, so these didn’t disappoint here. I wish the set came with kitchen shears, especially at this price point, but overall solid set of knives. Would definitely recommend.
Le couteau de chef laisse visuellement une très bonne impression. L’apparence de la lame et du manche est exceptionnelle et accrocheuse. Le manche en bois d'érable est poncé en douceur et la transition de la lame au manche est presque parfaite. À un moment donné, on ressent légèrement la transition. Visuellement, il semble presque parfait et se rapproche beaucoup de la finition de mon objet de comparaison du fabricant allemand Wüsthof.
En raison de la conception, l'accent est mis sur la lame. Cela ne me dérange pas lorsque je travaille avec le couteau. La lame est extrêmement tranchante et m'impressionne.
Conclusion:
J'aime le couteau de chef de Shan Zu. La finition est très bonne, je trouve le look et la présentation attrayants.
J'ai été très impressionné par l'aspect, le toucher et la qualité générale de ce set de couteaux.
La première chose que j'ai remarquée en manipulant les couteaux est leur poids. Ils sont assez lourds. Ils ont un poids agréable et sont capables de trancher les aliments avec facilité. Ma femme a été impressionnée par le tranchant. Ils sont extrêmement tranchants, surtout pour un couteau à double biseau. Elle les a utilisés pour couper des rouleaux de sushi aujourd'hui. Le couteau a pu couper facilement sans se déchirer.
Le porte-couteau est également en bois de haute qualité et la partie avant se glisse pour que vous puissiez apporter l'ensemble des couteaux à steak de l'ensemble sur la table.
Les manches en bois sont magnifiques. En comparaison, cet ensemble fait passer mon ancien ensemble de couteaux (vieux de moins d'un an) pour un déchet.

L'acier de Damas était l'acier forgé des lames d'épées forgées au Proche-Orient à partir de lingots d'acier Wootz, importés du sud de l'Inde ou fabriqués dans des centres de production au Sri Lanka ou au Khorasan, en Iran. Ces épées se caractérisent par des motifs distinctifs de bandes et de marbrures rappelant l'écoulement de l'eau, parfois en forme d'"échelle" ou de "rose".
