For the time being we have no authorized distributors, but we plan to have many in the near future. Please subscribe our Newsletter to keep you informed. Alternatively please contact us for more information.

  • It depends on your own personal preferences. Especially a chef’s knife is usually a must-have in any kitchen. For detailed information of various knives of different dedicated purpose, please visit our website: www.shanzuchef.com

  • Each culinary blade shape has been developed over the years to address specific needs and uses. Some, like the chef’s knife and the paring knife, are general-purpose knives that every kitchen and every cook needs. Others, like the boning knife and the meat cleaver, are for cooks who have specialized needs; in this case, working extensively with meats. The product description for each knife on SHAN ZU website provides information on the key uses for each particular knife.

  • Micro chipping can be shown on an even very hard steel knife with poor knife technique and improper use on wrong food. A cook who is unfamiliar with the hardness of Japanese knives may use a knife to cut bones or other very tougher food, or strongly chop down against a cutting board, so as to cause chipping on a blade edge. The damage will be even more pronounced when cutting against ceramic, glass or marble.

Micro chips in the blade edge can also occur if a spot of rust develops on the extremely thin edge because of poor maintenance of the knife. Please make sure the knife is thoroughly dry before storing, the chances of chipping are reduced enormously.

Of course, if there is a problem with the materials or manufacturing itself, we’ll take care of that, too. Please contact us for evaluation.

Knife Steel

  • Stainless steel is an alloy of Iron with a minimum of 10.5% Chromium. Chromium produces a thin layer of oxide on the surface of the steel known as the “passive layer”. This prevents any further corrosion of the surface. Increasing the amount of Chromium gives an increased resistance to corrosion.

Additions of molybdenum also increase corrosion resistance in reducing acids and against pitting attack in chloride solutions. Thus, there are numerous grades of stainless steel with varying chromium and molybdenum contents to suit the environment the alloy must endure. Stainless steel’s resistance to corrosion and staining, low maintenance, and gorgeous lustre make it an ideal material for many applications where both the strength of steel and corrosion resistance are required.

  • Yes, stainless steel is “stain-less” not “stain-impossible”. Stainless steel knives can in some circumstances rust but they are much more resistant to corrosion than ordinary carbon or alloy steels.

  • The Rockwell scale (aka HRC) is a standard to compare the hardness of steels. It measures hardness based on the depth of penetration of a diamond cone pressed into the material at a constant pressure. In short, the higher the number, the harder the steel.

In general, SHAN ZU GYO Series and SHAN ZU PRO Series made of premium Japanese steel with 60-62HRC, SHAN ZU Elite Series made of 9Cr18MoV steel with 57-59HRC, and SHAN ZU Classic Series made of X50CrMoV15 with 55-57HRC. An increase of 1 degree Rockwell equates to an increase in hardness of about 10% as well as an increase in edge-holding ability. These degrees of hardness enable SHAN ZU knives to be thin and sharp without being overly brittle.

  • 9Cr18MoV and X50CrMoV15 are two different types of premium steels that SHAN ZU uses to make our blades. They differ in the compositions like C, Cr, Mo, V.

9Cr18MoV is highly refined high carbon stainless steels with excellent hardness, edge retention and durability.

X50CrMoV15 contains less carbon than the other two so it has better weldability and rust resistance.

Knife Sharpening

  • Honing steel is used to realign the micro edge of the knife. Gently pulling the blade across the honing steel at the proper angle straightens the knife’s edge. Given the advanced steels that SHAN ZU uses, the edge will tend to stay sharp longer than other knives—depending on how often you use your SHAN ZU knives. Depending on use, you may wish to hone your knives only once a week or so.

  • To maintain the life of your blade and for optimal performance, it’s important to keep your knife honed. But remember that there’s a big difference between honing and sharpening. Honing maintains your blade. It simply realigns the micro edge of your blade to give you the best performance possible—until your knife is ready for sharpening. Sharpening actually removes metal from the blade, putting a fresh edge on the knife. If you hone regularly, you’ll cut down on the need for sharpening and extend the service life of your knife.

You can easily hone your knives with the SHAN ZU Honing Steel by gentlely running the blade across the honing steel at a proper angle. A fairly sharp knife may only need 2-3 repetitions on each side of the blade, while a dull knife will need more. (Please do not use a diamond steel for regular honing as diamond steels are for sharpening and will remove metal from your knife. Use a diamond steel only when it is necessary.)

  • SHAN ZU offers a whetstone that works on SHAN ZU knife well and gives you the brand new sharpness. But please remember that sharpening is not something that should be done on a daily basis. Sharpening actually removes some of the metal from the blade, so sharpening too frequently may reduce the life of your knife.

To maintain the life of your blade and for optimal performance, it’s suggested to use SHAN ZU honing steel to hone your knife regurally. SHAN ZU honing steel straightens the knife’s edge and helps it stay sharp. If you hone the knife regularly, you’ll cut down on the need for sharpening and extend the life of your knife.

  • SHAN ZU Honing Steel is strictly for honing, that is, realigning the blade's edge; it won't take material off your blade. In general, ceramic rod is a sharpening rod and will take material off your blade; it will not only hone, but sharpen. Use a ceramic rod more sparingly than you would a honing steel.

  • Select the proper coarseness for your whetstone.

Not every knife needs to start at the coarsest stone you have, on the other hand a very dull knife can not be sharpened on only your finest stone. Starting with the proper coarseness will ensure that you achieve the edge you need quickly. If your knife is very dull or has a nicked blade, start with your coarsest stone. The coarse stone removes material quickly so a poor edge can be refined quickly. However, the coarse stone must be followed up with your finer stone to refine the edge. If your knife is only slightly dull and just needs a quick touch up, starting at a medium or fine stone can save you time. Starting on a fine stone requires fewer steps but must only be used on an edge requiring little work.

Find the right bevel angle of sharpening.

Different knives require the edge of the knife to be applied to the stone at a different angle. In general, most straight blades need to be sharpened at a 20 degree angle. Your knife might need a larger sharpening angle if the blade is very large or thick. If you're using a very coarse stone, you may want an even shallower (lower) angle so you don't sharpen off too much of the blade.

Apply water or oil to the whetstone.

Some stones need water, while other stones need oil for floating the swarf (small metal filings created when sharpening) away. Simply apply a few drops of either oil or water directly to the stone. (We recommend using an inexpensive spray bottle for applying the water) The lubricant you need is determined by the type of stone you are using. Water stones and diamond stones require water. Oil stones such as India, Crystolon and Arkansas stones use oil for a lubricant.

    Sharpening the knife.

Rest your knife on the stone at your chosen bevel angle. An easy method for determining the angle by eye is to visualize a 45 degree angle and then take half that amount. That will give you a ballpark estimate of the angle and then you can adjust accordingly up or down. With a slicing action bring the length of the knife across the stone with a motion that starts with the heel of the knife on the stone and ends with the point of the knife. The motion should resemble a sweeping arc pattern across your stone. Be very careful to maintain the angle of the knife on the stone. Longer curved knives provide additional challenges but as long as you can maintain the angle you will be sharpening very effectively. Repeat this process on the other side of the knife and continue repeating until you get a razor-sharp knife.

Knife Care

  • Improper cleaning of the knives is the main cause. This could include leaving some soap on the knife, not thoroughly rinsing the knife, not clean the dirt thoroughly from the knife, etc.

Not drying the knife after cleaning is the second big reason. We suggest you dry the knife with a clean and soft cloth every time you wash them.

Another cause of rust or corrosion could be the contamination from other metal products, such as scouring the knife with steel wool. The iron particles from the steel wool could rust stainless steel.

The addition of chromium to all SHAN ZU knives helps them be more rust resistant, but care should still be taken to avoid rusting.

  • There are many general stainless steel sharpeners available on the market and any of these can be used to remove rust from your stainless steel.

Please visit your local kitchen shop or department store to find one that is specifically produced for kitchen products.

Alternatively SHAN ZU also has a sharpening stone which can help with rusting. It can be purchased from SHAN ZU official website and SHAN ZU online stores on Amazon.

  • Use the right cutting board. The choice of cutting boards can dramatically improve your knife’s ability to hold an edge. A wooden cutting board is more friendly to the knife as it is soft enough to cause less damage to the cutting edge.

Properly clean your knife. It’s better to wash the knife by hand instead of in dishwasher. In addition, after your knife is properly washed, it’s important to dry your knife thoroughly before putting it away.

Honing the knife before every use and taking regularly sharpening the knife also play an important role in keeping the knife sharp. We recommend using the same brand sharpener to ensure least damage to the knife.

  • One way to keep a SHAN ZU knife (or any other knife) sharp and avoid chips is to use an appropriate cutting surface. It includes wood and polypropylene board. If the knife can leave a cut line in the board, your cutting board is sufficiently “soft”. Please do not cut on tile, ceramic plates, marble, granite, or acrylic. All of these surfaces will dull and chip your blade very quickly.

  • Please do not use SHAN ZU knives on bones, joints, or frozen foods. Most SHAN ZU knives are designed for precision slicing rather than crushing down through hard materials. SHAN ZU knives range from paring knife to chef’s knife that are designed to take on different types of tasks. Please use the knife properly to prolong the service life of the knife.

  • Chips can happen due to improper cutting technique. Most of SHAN ZU knives are designed to be used in a smooth, slicing motion—and never in a forceful, up-and-down “chopping” manner.

The proper cutting motion is a "locomotive" motion, pushing the knife forward and down as you cut through the food, then pulling the knife up and back towards you. This motion is also similar to cutting wood with a handsaw—forward and down, then back. The razor-sharp SHAN ZU blade makes this practically effortless. When you first begin using a SHAN ZU knife, go slowly and enjoy the precision cutting ability of your new kitchen cutlery. As you gain experience, you will be able to work more quickly. No matter what your experience level is, be careful and always pay attention to where your fingers are in relation to the knife.

Another reason may lie in the cutting board. Please do not cut on tile, ceramic plates, marble, granite, or acrylic. All of these surfaces will dull and chip your blade very quickly. Wood board are preferred.

  • Micro-corrosion, which can result in tiny chips or missing pieces in your knife’s cutting edge, can occur because moisture is left on the cutting edge. Moisture weakens the stainless steel and promotes micro-corrosion. If moisture is left on the cutting edge repeatedly, even normal use in the kitchen can result in small chips in the weakened sections of the edge. To guard against this, wash your knife immediately after use and dry it very thoroughly with an absorbent cloth or towel. Please take extra care to safely dry the sharp cutting edge of your SHAN ZU knives, keeping your fingers away from the edge.

  • Small chips in the blade are produced through normal use of the knife, so don’t panic if it has happened. Using a sharpening steel or a whetstone should remove these chips for you and get your knife back to brand new sharpness. For larger chips you may need to get your knives professionally sharpened.

Please note that as chips in the blade are not due to manufacture fault, they are not covered by the knife guarantee.

  • SHAN ZU knives are guaranteed against manufacture fault only during 1-year warranty.

If your knife is snapped under the warranty, please email us and send a photo for us to determine whether your knife has snapped from manufacture fault or not.

When the knife has been examined and the outcome is manufacture fault then we will offer replacement. Unfortunately if the knife has no manufacture fault, then a replacement will need to be purchased.

  • We recommend that you do not wash your knives in the dishwasher. Dishwasher detergent is very abrasive, and along with the banging around that happens during a wash cycle it, will take the sharp edge right off your knife.

Try to wash knives by hand in the sink with dish soap and water. Keep the blade facing away from you and the knife low in the sink. And after washing please don’t forget to dry your knives with a clean and soft towel.

  • Store your knives in a block, a knife case, an in-drawer knife holder, a sheath, a magnetic bar, or in the original box. Do not just throw them in a drawer. Otherwise they can get dulled or chipped, as well as being a potential hazard when you reach into the drawer. Clean and wipe knives up before storing them.

  • If you use your SHAN ZU knife correctly, it can provide you with a lifetime of service. Yet using your knife correctly isn’t only about how to maintain the edge or how to sharpen the blade; it’s also about how you use the knife on a daily basis.

Please do not push straight down on your blades. Not only will this result in arm fatigue for you, it can also be hard on your blades and could result in chipping. When you cut, it’s important to use a “locomotive” motion. Move the blade in either a forward or backward direction. By pushing the blade forward when you chop, rather than pushing straight down, the blade does the work instead of having to use your muscle to cut. The same applies to pulling back on the knife. This slicing motion will cut down on unnecessary muscle strain and keep your blade in excellent condition.

  • If the knife just gets some chips, please use a sharpening steel or a whetstone to remove these chips and get your knife back to brand new sharpness. For larger chips you may need to get your knives professionally sharpened.

SHAN ZU knives are guaranteed against manufacture fault only. If the knife is damaged because of falling down the ground, it’s not covered by the knife guarantee.
