Art of Edge

The cutting edge is made of high performance high-carbon 9Cr18MoV steel, making cutting a breeze. Hand polished to approximately 15° on each side using Japanese Honbazuke method, guarantees precise cutting.
Precisely tapered tip and heel minimize surface resistance for buttery smooth cut through. Fluted edge creates tiny air pockets which minimize sliced food stuck on blade.
